I'm using the mail() function in PHP but the emails are appearing in the junk mail in Hotmail accounts. Is there something I can do to stop this?

It has got something to do with the headers, I believe. Google it.

I'll look up the header issue.
Is it possible that shared servers could be causing an issue, i.e. domain ip lookups are not working?

Quite possibly. Also some ISPs (e.g. AOL) will not accept email if there is no reverse DNS lookup available (i.e. almost any shared server!).
