some using my mail server for spamming

Hi I wonder if some can help. I have a PHP shopping trolley and somehow people are using the site to send out spam mails.

I can not work out how they are doing it and how to fix it and my host is not being much help.

They are probably exploiting your mail headers. Try this article at Wiki:
