Do anyone know the importance search engines give to style sheet information?

Surely if text is hidden on a page it will not be given the importance of visible text?

Surely if the text is hidden on a page your site will be penalized...

SEs don't give any importance to the style sheet altough they can recognize more easily contents in CSS.

That may be an incorrect statement. The search engines have no way to automatically deal with hidden text via CSS.

Your main concern should be someone reporting the hidden text to the search engines. There is a whole new breed of marketeer out there, one who will quickly report your dirty deeds if they find them so be very careful with what you do. ;)
