I've been lurking here for a while, picked up some excellent info which has got our site right into the first page for quite a few KEYWORD KEYWORD searches on google.co.uk and a few other engines.
But I have a couple of questions I'd be grateful for answers to if possible.
1. We've used a click and build store site to integrate with a credit card company, but only our index page is indexed on the search engines. I guess (from what I've read here) that this is because other pages are dynamic. So, the question: I'm experimenting with linking to another site where I can store straight html pages that I can optimise and have links back to the store. This seems a good idea but is it? Would that be spamming? Will google follow the links and index the html pages? or would it index the dynamic pages if we were more patient?
2. Like I said we're scoring highly for quite a few KEYWORD KEYWORDs, on google.com and .co.uk, even first place on a few but even so our traffic is very low. I've checked on the overture tool and these are keyword combos that people use to search. So...are there just alot less searches than we hoped, are people just not clicking, is the web somewhere that artists shouldn't venture?

If I understand what you're saying, I wouldn't do it. It sounds like you're creating content on a separate site for the sole purpose of helping your original site's rankings, which sounds like spam to me.

Most SEs can and will index dynamic content if they can find a static link to it. And that includes Google, which indexes a ton of dynamic news content on my hobby site because I have static links to each new article on our home page. So if you're not doing so already, make sure you create static links to the dynamic content.

The stats presented by the Overture tool and others like Wordtracker are, in my opinion, not something you should rely on for precise numbers. When I use those tools, I consider the numbers for their relative value -- if search term "A" is said to have 500 searches and search term "B" is said to have 250 searches, then I assume "A" to be twice as popular as "B" without expecting the actual numbers to be accurate.
And as far as artists staying away from the web ... search engine referrals should be just one of many aspects of a marketing effort to get people to visit your site. You should be using Art-related community sites to advertise the site, you should be looking for other sites to link to yours, and you should be doing some sort of offline marketing, as well, in magazines/newspapers/etc. where art buyers can be reached.
A lack of visitors isn't a signal to quit, it's a signal to work harder. :)
