During the course of checking my site via Google I noticed today that the cache has a two week old version of the index page. Of course now my page is buried as far as the ranking goes. I was wondering if this has happened to anyone else?

Yes, this happenes to anyone whose page has changed dramatically since the last update AND whose page was not spidered by the freshbot within the past 3 days or so.
It is completely normal.
Your updated page will be spidered by the "regular" Googlebot once a month. This "copy" goes into their cache. IF Google's "freshbot" later spiders the same page, then the new copy replaces the monthly copy, but only temporarily. It will expire after about 3 days. If the Google freshbot stops spidering your page for more than a couple of days, then Google's cache will revert to the last monthly version. When the freshbot returns, so does your updated listing. Then, the next monthly spidering catches all the big changes you've made during the month. This causes the weird results you're seeing, but on average, it keeps most higher-PR pages in Google's index updated.
