Difference between Google.com & Google.de, .it etc..

any explanations

Hello,

One of my site rank very well (#2) in all Google domain (.it,.de.fr etc) except in the main Google.com
My site is in English and the indexed page is the main page.

If I do a test like :

[google.com...]

AND

[google.com...]

Results are differents.
I tought hl was used only for the google interface language and will not interfere with results.

If someone can explain the difference,

I read if, but I didn't find my answer.
I always use "the entire web" option and "Return pages written in any language" for all my tests.
My site is located in France and the text is in english.

I have another site (site2) hosted on the same server that rank #8 with the same keyword1 & keyword2 on every Google domain (.com, .de, .it, .fr etc..)

I would like to know or have some clues to reflect my ranking for site1 on Google.de, .it, .fr etc.. to Google.com

Keywords are : hotel paris
