If Google has a doorway site cached that, when you click on the link, refreshes to the main site, is that an indication that they're using spider food to get google to cache the doorway?

Most of them are redirects from doorways.

No, it is probably just an indication that they are using JS or some other server side solution to prevent page views from Google's cache.
