Cache vs. Update

Why one and not the other?

Ok, I know the update is on, but I have a little question. I'm seeing that my site has been updated because of the new title for the page but when I check Google's cache, it still has my old site. What's going on? Thanks!

Google still has a site I've been watching that does not exist, and hasn't since July, in their cache and SERP's.

So for many sites, the whole cache update isn't complete, or doesn't get done - not sure why.

Especially since that is supposed to give people a chance at getting the site they intended to visit, it really makes no sense to present a user with an outdated page, which could potentially provide very misleading content (eg, a sale that was for one or two months only) a consumer might get upset, when in reality, it's Google that gave the customer access to mis-information. Or outdated info.
