Is it a guess, your best guess, and are you aware of the many other things that make it difficult to get certain sites into google?
From my reading here, I feel that Google's algorithm very rarely takes only one thing into consideration, but downrakings maybe be caused by a combination of "transgressions" adding up.
For example, there was a guy in here not so long ago that was unaware that google, very rarely, blocks domains that were previously owned by people who had done bad things. Indeed i think almost all of use didnt know that until googleguy confirmed it! So look at all the possible reasons for you not getting indexed.
Let me know. Now you have got me worried!

if googlebot hasnt visited, then how can google tell about your same color text?
Are your weblogs operating ok? And as NFFC said, is your robots.txt OK? Are there links FROM sites that could be suspect on google's terms.

site 1 had two links, one from a very low ranking site and the other from a url with a lot of variables in the url, probably too many for google to look at.
site 2 only had one link from a low ranking site.
Based on this I wouldn't expect a listing in google or if I did have one I'd expect it to be a very low page ranked listing.
You mention that the site is linked to by thousands of sites did you use a free for all submitter to get these listings if so these are filtered out by google?
I agree with NFFC. If I were you, I'd remove the URL's from your profile as soon as possible. Upon quick glance, I'd say crosslinking is a problem. Your other properties are also at risk. There are other issues at hand which probably shouldn't be discussed in the open forum.
P.S. A blank robots.txt file is not recommended. According to Brett, some robots may misinterpret a blank robots text file.

Based on a recent post by Brett, he states that having a blank file like this might be misinterpreted by the spiders. I've never used a blank file like the above because all sites that I manage have at least one directory that I disallow, usually a working or temp directory. Since I use css and javascript, I always have those two directories disallowed.
As far as this part of your original question... when this kind of formatting comes up, I usually handle the font color with css. That way you don't have similar or indentical font and background colors to flag the engines.
I don't know whether the engines have gotten smart enough to see your example, of text in a table, as not hidden text. I do know that there are some flagrant examples of stuffed hidden text in a lot of competitor's pages that Google isn't seeing.
