SiteA.com has link to Product.com on every page as an advertiser as well as a link to SiteB.com.

SiteB.com has a link to Product.com on every page as an advertiser as well as a lik to SiteA.com.

Product.com doesn't have a single link to either of the sites because they pay for their links.

What's good/bad/indifferent about this setup?

You're into an area where most of us wouldn't like to say with any certainty. The siteA siteB part looks OK to me, although some people here would be concerned about such heavy interlinking, even among just two domains.

With the introduction of a third domain I start to get twitchy, but some people are quite happy even if it's ten domains.

If it was my collection of sites, I'd be OK with it because the 3rd domain doesn't link back. No guarantee though.
