after this recent update of pr our site dropped from a 5 to a 4 but we have more links now then we ever did, could this be attributed to the fact of the quality of the links?

I think the links displayed as backlinks are still just a randomized lot and number. I personally wouldn't interpret too much into it.

Yes, previous linking sites may have droped in pr, or you may have lost one high pr link and gained several lower ones!

Probably many previously counted links from directories have either now been ignored or dropped in pr.

As Thomas says, the google link tool is a mere snapshot, not a complete picture. Try alltheweb or others for a better picture.

High PR is a bit like having many clothes in your wardrobe, but each are relevant for different situations.

You can be sure that getting more links, no matter what their quality wont make your pr go down. Its more likely due to googles reassessing their their page rank grading. For example yahoo has dropped a point so you are in good company.
