I got a notice from my host that they are moving servers next week at 1:00 AM. Downtime is expected to be between 1 and 2 hours.

Should I be concerned?

If you trust your host - no.

Sites go down all the time. You might lose a few hours of visitors, robots may not be able to update its cache for your site if it visits you in that time, but generally, life should go back to normal when you go back online...
