changing pages listed on google

I'm currently re-structuring my web site using directories, from my current site, which has a very flat hierarchy (mostly in the root directory)

Now, all my pages are listed and are doing well in google but in the past if I have renamed or moved a page, its still listed and just gives a 404. I know I will have to use a permanent redirect but how do I go about it? Is there an easy way to make a mass permanent moved for all my pages so that google will pick them up?
