I have one site that for month's has been jumping from page one to page three and everything in between in the google results almost everytime I do a search and I do not know what it causing this or how to stop it.
I have other sites, similar pr, similar competitiveness for phrase searched and they barely move at all, maybe one or two positions at the most.
Does anyone know the cause of this, or is there something I can do to stop it from jumping around so much in the listings?

I don't know that it's only everflux. Google results are served by different datacenters. You may be getting results from different datacenters with each search.
If you want to try and get your results to stabilize try working the anchor text of links coming to your site and moving the keyword in your title as close to the beginning of the title as reasonable. Maybe increase your keyword density in the body area too.
similar competitiveness
This could be the point. I assume you take "number of results" for competitiveness, but I think this is mostly defined by how many people are targeting these keywords and with how much effect, and how much spam Google has to detect (I would guess that some spam filters only apply to certain keyword areas, because simply only those keywords are spammed regularly).
Maybe the keywords are just not similar competitive.
Or the sites of which you talk have different age.
