Question about the date field on Google

When I search for my site on Google, I see there's a date field in green for my root page. By reading through these forums I've since found out that this tells you how "fresh" the page is. My situation is that some of my level 1 pages (directly linked from root page via menu) don't have a date listed at all. What does that mean? Googlebot visits these pages every two days. It visits the pages with dates 1-2 times per day. Is this date thing an on/off thing? Is there any reason why it wouldn't list the date?

This isn't any real big deal or anything but I am wondering if there's something that I should know here that I'm not aware of.

P.S. Half of the level 1 pages do have a date listed (not just the root page), half don't.
