Dicey Results Filters - what do they do exactly?

Will this stop spam spiders from getting email address?

The most spam mail comes from a contact email address posted on my website.

Will the spam filters help? If so, when should I change this email address?

What else are the filters expected to do?

The spam filters are to catch search engine spam, not email spam. There are scripts available to brak apart and rebuild your email address but it sounds like it might be too late for that one.

Dumb question - what is search engine spam?

Not quite as dumb - Where do I find scripts for this?

A web page that is constructed in such a way as to violate the Terms of Service or guidelines of a search engine.

Examples would be a page that has:
200k of Hidden text,
29 Title Tags,
147 keywords stuffed in each alt tag, etc...

Search engine spam - Any attempt to deceive a search engine's relevancy algorithm

What isn't search engine spam? - Anything that would still be done if search engines did not exist, or anything that a search engine has given written permission to do.

Scripts for what?

I don't think this is too offtopic but some methods that I have been implementing to prevent email spam:

Encoding the entire mailto: email link in unicode

Masking the email address in unicode, so that it appears as a fully formed email address, but having the actual link go to a contact form. "Advanced" users know to copy and paste the email into their email software, novices just fill out the contact form.
