If I host my site using host headers on a non-dedicated server, will my site be affected in any way by other sites on that server even if there are absolutely no links at all between the 2 sites?

In general, no. But if another site on that IP is busted for SE spam or email spam, your site *could* be affected.
Personally, I wouldn't share an IP with any site that I don't control.
