What to trace , how to view

I wasnt sure where to post this so please move if needed.

I'm running some reports on IIS/SQL servers to plan RAM and CPU etc. Im using perfmon and putting traces on all the SQL and ASP counters over a weeks period.

Out the thousans of different things to trace what the key things for ASP/SQL ecomerce sites?

Things like Index searches per second, Queue time etc are they all relevant or are they a few KPIs?

And how do I view them visually to see the mean usage and the peaks over a week. Perfmon only seems to graph the current activity not the historical log.
