Now I want to add CJ links to my site for related category. Say my site is selling camping equipment from amazon with www.xyz.com
I want to target each merchant for related products like climbing, hiking, ski, fishing, boating, hunting etc with subdomain
[climbing.xyz.com...] (one merchant)
[hiking.xyz.com...] (other merchant)
........etc
Do I need to add each subdomain to CJ website setting under my account? I have already added xyz.com

Good reasons to not show all your sites in the CJ control panel:
1. Many affiliate managers also perform other web marketing functions for their company. If they see one of your sites that converts really well they may take some of your ideas and implement them on their own sites. This could result in fewer sales for you.
2. Many affiliate managers double up as part-time affiliate marketers. If they see a particular site has a really high EPC, they may try to take some of your ideas and implement them on their own sites. You might be asking for more competition than you want.
Although neither one of these problems is very common, it can happen. I don't like to show my cards to anyone.
Regarding the technical aspects of CJ, having one CJ link posted on different domains has no affect on tracking. If you want to know which site your sales are coming from stick some value in the SID field.
Just my 2 cents.
I have tried to add the site, just to check how CJ treat it and it accepted it as a new site.
I tried to take links for one of my advertiser and code has different PID. So it seems it is only for watching earning via sites.
So now I assume that [abcdef.xyz.com...] will not cause any problem in CJ.
