What service is Mozilla Firefox using to pull these default pages? It's king of annoying - I'd like it to just drop me into Google or a search instead of serving up a page that I'm mostl likely to click out of anyway.

Download the GoogleBar extension and you wont have to worry about it.

The redirection is doing a Google 'I'm feeling lucky' search.

You can alter this behaviour by going into about:config and changing the value of keyword.URL to [google.com...] for a default Google search.
