I admit to having a soft spot for Philip Glass' soundtrack to the movie Mishima. I thought it captured a certain essence (as I felt it) of Yukio Mishima.
The movie was bad, but after listening to the soundtrack a thousand times, it was kind of cool to see/hear it within it's intended context. I still enjoy the soundtrack.
I enjoyed Japanese court poetry, that's pretty minimalist... I think.
In visual art it's hard to express nothing in a beautiful way without seeming trite, but I do like some of Frank Stella's work. Sculptor/installationist Charles Ray has some fascinating pseudo-minimalist work that I enjoy.
