Just recently launched a new site, I purchaced 2 domain names, I set up the A record for the .co.uk as the direct url but should the 2nd url be forwarded as 301 or a 302 redrect?

Just brand/product protection, one .co.uk and one .com
I currently have the .com set up as 301. I was a bit concered as the tempory holding page which was up during construction seemed to get indexed under the .com
Today I can see that pages are now being indexed under the .co.uk domain. Which is what I want.

yes - that's what you want and the 301 is the correct solution for your application.
you want to keep track of requests for inner pages on the .com since you want to avoid multiple hops when redirecting. if this occurs you should set up a virtual host for that hostname and do all the canonicalization redirects you would do on the .co.uk.
