Question, do I risk being accused of spam if I do all 5 submissions in one day? Or even if I wait till one gets accepted then the other one and so on, do I risk being accused of spam for trying to get into 5 subcats that are more logical for parts of the site to be in or should I stick to the main cat?

If its a content site with 5 vastly different content sections, you may get more than 1 different topical category listing, but they seem to be cutting back on even multiple listings for some really good content sites if you look at some of the threads in their unofficial DMOZ forum. Good luck, and patience are key:)
I am a DMOZ editor. I have submitted to cats (not the ones I edit) for sites I promote in the way you are suggesting.
So I think it is acceptable if there is a good case.
What I've done when making several submissions is add a "note to DMOZ editor" at the end of the site description. I say that I think what I am doing is okay because blah, blah. But, if it isn't, please feel free to delete. That way they know I'm not spamming them.

You're unlikely to get 5 subsections of your site listed in 5 different subcats of the same main category. Instead, we would generally list the main URL in the nearest common category. I would recommend that you just submit your main URL to the main category.
This site is somewhat similar, the sections are part of a theme site but deal with different locations and are vaster than the single planet pages mentioned above.
What is the difference between the two cases? The main cat where the site should have gone to only has official sites like official tourist boards and such, not a personal travelling gallery such as mine. So I was left with no option than to submit to the 5 subcats. I would very much hope that the editor finds a suitable category for the whole site if he finds the multiple submissions relevant.

If the five topics are not "closely related", and the individual pages would really stand out in their topics, then submitting each page separately would not be considered spam. If the individual pages are near the minimum content acceptable for listing, then the editor may feel that the directory is best served by listing only the main site, as a "personal site" containing information on five different topics of personal interest.
Should I wait to get the top level ranking and let the editor fill in the lower levels, or should I apply subcategories with a note to the editor?
