Basically the problem I have is that some of my advertisers don't know their money is well spent because when my visitor responds to their advertisement, goes to their site and sends them an inquiry they don't know it originated from me.
Any suggestions?
Normally what it comes down to in these cases is the site you are linking to needs to implement better tracking themselves so that they can understand who is referring traffic to them (whether that is a "smart" implementation or via tracking codes in the incoming ad/link etc).

But it seems some can only be convinced of the effectiveness if the user himself tells them they found the company on my site - but of course these people just say they found them 'on the internet'.

It's up to *you* to track what happens on *your* site, but when you leave your site and go onto other people's it's up to *them* to figure out where the traffic comes from!
From the sounds of it whatever they do have is either not supplying adequate information or possibly no information at all...
You say you've implemented impression and click tracking so you're probably in the position to give them advise on how to set a similar system up themselves, essentially what you are doing for click tracking could be applied to tracing cross-site traffic through to a purchase.
e.g.
If I click the "Buy Widget X" link on your site, your site records this then automatically sends me to the appropriate page on the partner site so that they know the traffic came from you. From here it is then up to them to determine what that user did.
Alternately if they just want to know how much traffic you referred to them from their own sources then surely they could just check their logfiles?
