I made the mistake of having 5 sites on the same shared hosting/IP so I just got another host. The idea is for our friend Google to consider that it's not the same owner and IP and to be able to link my sites.
Regarding Google Search, what is the right approach to follow? One account/address per site?
Thank you in advance.

Regarding Google Search
I'm not sure in what context you are asking. Google Search is not a service that you register for, it is used by visiting their search service.
Do you mean GSC? You have a Google account and within that account you register for services that you use. You do not create a new account for each domain, you register each domain in your GSC account for GSC.
Because your question is asked in the Analytics forum, are you asking about Google Analytics?

There are no penalties based on content of a GSC account. It is possible that if the same content is found on several domains, that they are less likely to rank well compared to the total number of sites on the same topic, but only in the way that they add more numbers to the competing space. But that is due to the limited number or slots on the first few pages of results. It is not due to one account owning several domains. Each domain is considered against the other domains on that subject, so the more you create, the less likely that you will be on top.
You need to consider that on the topic of flowers, for example, there might be 2 million websites. How many will not rank at the top? Most of them will not rank at the top. but if one domain is covering only tiny pink flowers and another is covering the care and planting of tiny flowers they are not competing for the same space. They are different verticals though both might share some similar content.

It sounds like you are attempting to build a link scheme to help with ranking. Things don't work that way any longer. g is aware of these attempts and will not reward them.
OTOH, 10 sites with the same content (or near same) are in competition with each other (as domains) and none will have a chance to rise to the top.
