We can see a drop in AMP traffic for all the platforms (4-5 websites with 10 million + monthly traffic).

I confirmed with few other Webmasters/SEO (I will not name but these are enterprise websites with millions of traffic) and they observed a similar trend for drop in AMP traffic.

Google Analytics is showing a drop in traffic while GSC is completely unaffected.

Who else is seeing such a pattern?

It is possible that the drop could be related to Google's Consent mode in many locations. Google Analytics drops have been noted in many AdSense threads until they update their Consents to Google's newer banners. Mostly seen in EU/GDPR locations but there are others as well.

Google stopped pushing AMP pages a few years ago so log data should tell you whether the GA numbers are right or not.

Thanks for your insight.

Well I was able to connect with few of the people offline and some on Twitter were they faced a similar issue.

To add to this, from today morning we are see that the numbers are back to normal. We did not change anything from our side. Maybe a glitch from GA.
