Using third party social media bookmarking

Many websites use bookmarking services such as AddThis or ShareThis. These can be quite helpful, especially with today's popularity of social media. What about information these companies likely gather? By using their services doesn't it mean that we give them access to our websites' statistics? This is not a rhetorical question, I'm just not sure how much info they can record if I post a .js link to their website.

They don't really focus on analytics -- the best thing I can tell you to do is to set the clicking of the addthis or sharethis link as a trackevent -- [google.com...]

Then what I would say is just set the code for the javascript link to be when a person clicks on the actual link, add the values in there necessary to track the click -- you could then give this a conversion goal / give it value as well.
