JS-tracking:
You could do some htaccess/iis developing, so that when the user clicks on a .pdf-file on the SERP, she doesn't get sent directly to the .pdf-file, but instead gets sent to a page, that calls the gif-file, and then downloads the file.

But it's a stupid solution.

Another way is just to check your log-files.
