Anyone any suggestions? Is it possible either through Google Analytics or other... to track visitors from particular IP referral addresses and then the route they take through a website... ie. which pages they visit and if they purchase anything?

you could set up a new profile with a custom filter to include only traffic from a referral url or from a visitor's ip, but i can't see how you would include only referring ip's. as far as tracking the route of a visitor, you could either set up goals and funnels or use the GAnalytics Content features.

I personally use Statcounter.com which provides these stats amongst many others as standard.
