In Google Analytics, when I'm looking at a landing page and I select "enterance keywords" for that page, I get a list of keywords.
I'm a bit confused about what's written on that list.
Were these keywords used to land on that page from search engines?
Were these keywords used to land on any other page of the site when the user eventually ended up on that page?

Go to Top Landing Pages within the Content section and you will see a list of all landing/entrance pages for the site. If you then click on one of these pages, GA displays 'content' stats for the page not just stats when the page was the landing page for the visit.
So I would agree with your assumption.
As far as I'm aware, its quite difficult to see what keywords were used in search engines to get to a specific page. The closest I've got to this data, is by going to the Keywords page in the Traffic Section and then select a keyword. The following page has a 'Dimension' dropdown in which you can select Landing Page. This shows you the Landing page(s) for the keyword. So by going through each keyword you can eventually work backwards and get which keywords are used for specific pages.
If anyone knows another (easier) way to get the keywords for a specific landing page, please let us know :)

The Entrance Keywords report should only list keywords used to land on
that landing page.To see all keywords by visitors to that page (whether it was their
landing page or not) you can use the "Dimension: Keyword" pull-down
from the Content Detail report.
The thing to remember is that keyword is stored as a cookie in that
visitors browser for up to 6 months. If they visit your site using 1
keyword today, and then end up landing on the other landing page via
"direct" (like a bookmark or email) tomorrow, that second landing
page will show the original keyword as it's source.
