Is there a way to, for example, capture a lead's email address and be able to see that email address tied to a specific lead within the Google Analytics reporting?

No.

If a person volunteers an email address, then some systems can do this - tying personal data to an encrypted cookie. When the cookie is deleted, then it will only be re-built when a user logs in again, but Google doesn't do it afaik.

Technically, this is possible, using the "User Defined" field of Google Analytics. The problem resides in the privacy policy of GA that does not allow us to collect any personal information about visitors.

You could however transfer information collected by GA to your CRM database and therefore tie it to a lead.

Hope this helps.
