Is anyone using both Google Analytics and Google AdWords Conversion Tracking? Is there any benefit to using both?

It depends what information you need ;)

For basic conversion stats, I'd say you'd be better off finding one system that you feel you could rely on to be accurate and could also directly compare more than one source. But then, I easily get carried away and think that more stats must be a good thing :)

If I were to only use one, would the conversion stats show up in both Analytics and AdWords?

Nope, they're separate systems. As I recall, they track conversions differently too, because of the difference in date between original adwords click and actual conversion.
