How is it possible that x-rated sites link to my site and yet when I view the code on the x-rated site there is no link to mine?

Check Google's cache of the pages; they may have removed the link.

Or they're faking referrals to get visitors.

Difficult to fake referrals in code. Could be they are spidering you from a third party site via a redirection page on the x-rated site in a naive attempt to generate traffic, but also possible that the x-rated site is using redirected (and possibly momentarily visible) pop-ups to generate revenue as a partner for an unwitting ppc network using non x-rated keywords. If the former is true, you should not see a diversity of IP addresses. If however, you do see many IP addresses the latter is more likely, so, check your ppc campaigns.
