With the server.variables referer I can see the last page someone was on before visiting my page. Is it possible to extend this to the page before the page someone clicked onto my site?

Your weblog only knows the referral (one page before). You couldn't know more (extend).

I would propose doing this by using a script embedded in each page requiring the tracked info.
At the moment the server.variables referrer command only shows the past 1 page. I would like to know if it is possible to extend this to 2.

You may push the links into a cookie. Then you will know all the activities of a visitor. (not only past 2 pages).
