How do I track site visits and people's paths from IIS logs

Hi,
My first post - I've had a look for posts on this already but can't quite find the answer - but feel free to point me in the right direction if I've missed it.

I'm writing an app to analyse our IIS logs. I want to track site visits and later track people's paths through the site.

For site visits we were going to count unique cs(Cookie) but if people have cookies turned off then they won't be counted.

Cookies being turned off messes up how we were going to work paths out as we can't identify who's who.

Is there a standard way of working this out?
We were intending to use our own application for this but if third party software (e.g. webtrends?) does it then we would go with that.
