Amazon stats should update in the morning (seems to be around 9 eastern), sometimes it takes longer over the holidays or if the Amazon stats monkey is feeling cranky (associates board running joke). Usually if they dont have it up by 10AM Eastern, they'll have a note on the Associates announcement board and (hopefully) a time when they expect the reports to be up.
I'm currently promoting a preorder item, and it seems to be reporting correctly, so I wouldn't worry. If you're using PPC, however, I'd keep the bid low as preorders get a lower general conversion than items that are available. Conversely, once it starts shipping, you should probably reevaluate ROI (do it for about 3-7 days once its started shipping) and possibly increase your bid. I know for me it's hard to get up in the PPC results, but I'm biding my time until the item starts shipping, at which point I can (hopefully) increase my ad bid.
Despite technically being an Amazon associate for over 2 years, this is the first time i've put associate ad's on any of my sites.

Does that mean that stats wont reflect the sale of the item at all until its shipped? Or will it show up as a conversion but Amazon withold the comission until it ships?
It'll show up in your ordered items stats when it's ordered, but not in your shipped item stats until it ships. Conversion rate stats seem to be based on orders rather than shipped items. And yes, you're only credited with commission when items ship.
