While it would be nice to be able to run reports by site, the thing is, I am not quite sure I want to let the merchant see what I am doing. While what I am doing is perfectly legit, I am worried that this merchant (or any merchant) would take a look at the site and its success and decide that they are better off doing what I do, except without me.
Anyway, the question is, do you tell or do you keep mum what you do, even if it is legitimate?

No, but they are in a field that I would not be surprised if they did as I have seen their contempories do it.

That's the other side, this field is also pretty clueless as to how the internet works. It's one of the reasons I started the site focusing on their products, b/c there was so much room for play. I would be surprised if they even knew how to do a proper investigation of KWs and competitors on the web, as it is not their main venue.
What's the benefit of divulging the info?
Good point. hannamyluv states it is because of the tracking, but that could be accomplished with an SID (although the reports aren't as nice/convenient).
You could also add a dummy site and use that siteid.

We ran phantom for 3 years. Using one PID for all the sites we had (hundreds). The sites' PID that we used was not very affiliate related at all. Of course when the AMs or whoever looked at it they couldn't figure out how we were making the kind of $$$ we were from that one lame site. Resulted in alot of "beating around the bush" until we were forced to give up the ghost to a few of our biggest producers.
Also remember the websites you list in your account can be given out by any AM to your competitors. Trust me, it happens all the time.
The last domain is where they are getting the traffic from, and thus compliant with any tos. How you got the traffic to the last domain is nobody's business but your own. For all they know, it could have been a serp or direct type in. The referer that they will see is the last outbound domain, blank, or a dummy hardcoded by the browser, never the real source domain.
