From the research I've made so far, Shareasale seems the best choice. I would like to ask if anyone has a dating website and using Shareasale or what other networks would be good for a dating website?

There are many ad networks, I've played and used almost all of them and can tell you that it comes down to who you are targeting.
I can tell you that I've used the same ad and keywords sets on 16 ad networks and know how each of them perform. There is alot of trial and error, and it always depends on how much money you have to spend.
However, dating programs have a dreadful reputation (among affiliates) and thus many affiliates will be skeptical of your new program, no matter what you offer or promise. There have been many dozens, probably hundreds, of dating affiliate programs that have failed to perform, and only a handful that have any reputation of success among affiliates.
You should focus on making sure that you "do things right" to avoid quickly earning a negative reputation for missteps -- even mistakes that might otherwise "understandable" for other affiliate programs. Try to identify all the "obvious" and "common" issues that are raised by affiliates of dating sites, and organize your information into a FAQ format.
Personally, I simply don't work with dating affiliate programs, either as an affiliate or as a consultant. (That's not because I don't believe in meeting people online -- I met my wife through our simultaneous ads on Craigslist.)
