If a sponsor's name is BrightNotebooks, what is your reaction to the idea of an affilaite buying the name Bright-Note-Books.com in order to capitalize on search engine optimization opportunities?

I don't have any ethical problems with it personally, but the sponsor may have big legal/tradmark problems with it.
If the sponsor gives you permission to do something like that, then I certainly wouldn't worry about the morality police coming to get you.

As an example, Amazon is very clear about not allowing Associates to use "amazon" or variations in their domain names. I would think most companies would have similar provisions, and as noted above, you could experience more serious consequences than just being booted from the program.

Well the sponsor isn't going to like it. This is an attempt to siphon off SE traffic that's actively trying to find their home page. In other words, if the affiliate succeeds then they'll be costing the merchant money rather than making them money.

Not to mention that it's likely to be trademark infringement.
