How to setup mail server DNS ?

OK I'm out of my depth - in the past have always setup domains via a hosting company with webspace and or had a control panel that will let me do email / web forwarding - so can forward all email for [e-mail] to [e-mail] etc

I now have a friend who has Swedish Domain, the control panel lets me add / remove NameServers and I have some webspace that I can point to, but how do you go about setting up the mail as the hosting does not give my any email server support?

If you can control the DNS then use a 3rd party mail system. Google Apps offers free domain branded e-mail services as well as a paid option.
