What exactly defines what posts are called "New"? I see many posts that I haven't read, and the new icon is there.

1) What other icons are there, and what do they mean?
2) I see people editing there messages, but the button doesn't normally appear for me (oddly enough, on this thread, it is appearing)
The date & time of a post in bold means that it is "new". New means whether the post has been made since you last updated you Last Read Pointers [webmasterworld.com]. The BestBBS software used on this site, doesn't automatically update which thread you have read, as it allows you control over them. If you read the help page linked to above, it should explain all.
The owner edit button, only appears for a set-time after you initially made the post (used to be one hour, it could be 20mins now though). If you make an edit before anyone else has posted, it will go unnoticed, however should you make an edit after someone has replied in the thread, it will attached a message to that effect onto the bottom of your editted post (traceability).
Other icons can include Flags [webmasterworld.com]. The option to flag a thread is at the btoom of the thread details.
The small yellow exclamation mark inside triangle means that it is a thread which you have posted in.
The little red ball next to thread listings is the 'new' indicator as explained above.
