DNS Servers vs Web Host Nameservers?

hi - i basically understand how dns works however i'm stumped regarding the following.

regarding the dns records (A CName NS MX etc) - where are these records held, in the dns servers, my domain registrars nameservers or the nameservers of my hosting provider?

It depends on where your NS records point. If it's to your host, then usually you'll control those settings there. It's also possible at some registrars to do extensive DNS control. Look at the NS Record.
