Required help in site hierarchy

will defining proper breadcrumb and site map without URL heirarchy help?

I have a website with large number of pages; currently site has no category defined neither in URL level nor in Breadcrumb. Current URLs are like www.example.com/category & www.example.com/sub-category. I cannot change pages as traffic is comming to these pages and I cannot redirect them to another URL as the site already has multiple redirects.
If I define Breadcrumb with proper categories i.e. home>category>sub-category and design a site map with this categories; will it define categories and site heirarchy for search engines?

A sitemap XML file is an unordered list of all your site's pages, so that won't help define hierarchy. Breadcrumbs or an HTML sitemap might help visitors determine the hierarchy you intend (perhaps using some nested lists).
