Possible to forward all outbound mail (server side)

Hi,
I host a client who wants to get a copy of every email sent and received though his mail server, forwarded to an archive address.

The site is hosted using cpanel on a VPS

Does anyone know how this can be done?

There is domain forwarding in cpanel. It even has a linked help page.
