I own a domain that currently hosts a website, but I'm curious about what Google Apps can do for my email services. Is it possible to set up my domain so that web requests go to my current host, but email is sent through Google APps? That would be the best of both worlds.

yes that is possible.
that configuration is done in the zone file on your domain name server.
after you set up google apps for email they will provide the information you need for your DNS config.

Yes. We do this for all our domains. Google apps is an awesome free set of services for small business owners.
