I have finally written my scripts today for an email campaign.
I will be sending a url email, should i send the home page of the domain or create a new page lets say for instance email.asp as a landing page?

if you want to track that click you should provide a unique url in the email.
once you have the analytics you need you can redirect to whichever page makes sense.
only you can answer which landing page makes sense for your campaign.

if i displayed a home page in an email would that interfere with google and seo?

Search engines index web pages, not emails. And it would be a really good idea to have your landing pages NOT accessible by regular links, etc. This will give you a clear picture of who's visiting the links from the email.
