When I open my ftp client, I notice all of my files are chmodded to 755. Is this too high? Do I leave myself open to attacks with this?

If so, what should the file(s) / folder(s) be set to?

It really depends on what the files are for. Some systems need those permissions. It would be impossible to answer this question without knowing a lot more about your system.

it also depends on file and process ownership.
