How we can analysis of competitor for a travel or holidays websites what thing we must to check during the keyword or site analysis.

Look for the reason they rank high. Many hotel sites rank in keywords like 'luxury hotel' or 'hotel greece' etc because they have many incoming links with relative anchor text.

Check the following:
1) Number of Incoming links
2) Pagerank of the page
3) Keyword density, keyword optimization in page
4) The anchor text of the incoming links
5) The Pagerank of the domain

Look in google. You will be able to find serveral tools to do your job.
