Baselines to monitor IIS & SQL

I have read all the stuff about monitoring etc but does anyone have any good counters and baselines they use to monitor a busy IIS with simple mirror drives and a seperate box with hardware RAID SQL.

I need specific baselines for busy shopping site with 100% dynamic pages, high inserts and very high reads

What type of baseline counters and averages are you looking for? Example hardrive writes per sec vs hardrive reads per sec for the sql box? As for the webserver it should cache anything it can to reduce the load on the sql server and increase the speed of the resulting pages.
