Can anyone point me to any decent websites or tutorials on exchange 2003 security?

I recently set up an IIS box with exchange 2003 for my company. I have tried to follow all the 'normal' security issues... I have shut down the relay so that no one outside of our building can send a mail.

Regardless some joker is on there sending out tons of chinese spam to tiawan addresses. I can't figure out how he's doing it. The microsoft site is not a lot of help, they liked to pretend such issues do not exist.

It's driving me nuts because he is stuffing so much spam into the queue that it actually causes the box to run out of memory.

I'm at my wits end. I am by trade a web developer and and a programmer, not a network administrator. So I am out of my envirement. Any tips would be great.
